The Food

Drawing inspiration from classic cooking techniques with a focus on Pacific Northwest cuisine, The Courtney Room offers the best ingredients from the land and sea. Chef Brian Tesolin pays respect to the island’s terroir through his seasonally cultivated menu. Our partnerships with local farmers allows us to highlight the local community and its bounty.

Chef Tesolin joins The Courtney Room team with experience spanning the country from highly respected culinary meccas (Hawksworth Restaurant, Vancouver, BC and Langdon Hall Country House Hotel & Spa, Cambridge, ON). Chef Tesolin is passionate about working with bright flavours and elements that bring a wow-factor to the simplest dishes.

Menus feature in-house dry aged natural beef, sustainable seafood, and fresh produce from our local farm partners. Our food is ingredient-driven and built on a foundation of classic European techniques. The dishes celebrate the bounty of the Pacific Northwest and showcase local growers and products. Ever changing. Always evolving.

The Wine

Our Wine Program reflects our food philosophy. Our selections are based on recognized classics alongside lesser known regions and producers, all with a focus on quality and sense of time and place. Being part of the Magnolia Hotel, we aim to appeal to our visiting guests and be a wine and food destination for the local community.

The Bar

The Courtney Room Bar Program focuses on the ebbs + flows of our coastal offerings. We thoroughly enjoy the research and art that goes into pairing locally foraged goods with the intent to showcase fresh ingredients from our bioregion through a variety of complimentary spirits, in-house ferments, and the experimentation of our bar team.

We honour the past traditions of great hotel bars by holding strong roots in classic cocktails, yet continue to push the boundaries through the exploration of our home: The Pacific Northwest.

The Story

Born of the desire to continue the experience of timeless hospitality embodied by the award-winning Magnolia Hotel & Spa, The Courtney Room delights locals and visitors alike with delicious local cuisine and exemplary service.

The Room

Taking cues from the old grand dame hotels of Paris, Sharon Bortolotto of BBA Design was inspired by the classic French bistro. The Courtney Room boasts high ceilings, and is layered with elements of Art Nouveau to create a casually elegant ambience. Focal features include commissioned artwork by Blu Smith in an abstract expressionist style and a central black granite bar framed between wood columns with white marble chevron detail.
