For this newest iteration of the Chef’s Tasting Menu, Chef Brian Tesolin is highlighting the little known but very versatile Opah, aka the Moonfish. Hailing from the south-east waters of New Zealand, this delicious fish offers different types of meat due to its ability to regulate its temperature to hold different temperatures in different areas of the body.

We always consider ocean health and sustainable seafood selections when planning our menus, and the Opah is well-suited to this ethos. Only caught as a by-catch in the Tuna and Hake industries, Opah is never the target of direct fishing. 

Featuring ingredients from local farm partners such as Sweet Beans Farm in Metchosin, Littlest Acres and Square Root Farm in the Saanich Peninsula, Silk Road Tea and local forager Lance Wildcraft, Chef’s Summer Tasting Menu is a feast for the senses.
